Bruno Paillard Champagne Cuvée 72, Late Disgorged

A gregarious, concentrated style with an integrated oxidative character of savoury nuttiness propped up with honey, cooked orchard fruits and maple syrup aromas.

Cuvée 72 derives its name from the period of aging of 36 months on the lees and 36 months in bottle.

The mousse is delicate, though, the impression of development tempered by low dosage and fine acidity. A smart balancing act indeed, and a clear example of the warming, settling effect of post-disgorgement ageing.
